Easy Vegan Breakfasts in 10 Minutes or Less!

For those mornings when you hit “snooze” more times than you should have, here are some quick and tasty breakfast ideas to get you through until lunch. These are highly versatile, and measurements can be tweaked to fit your own tastes. Don’t be afraid to get creative with other ingredients or just use what you have on hand!

 

PB & Chocolate Banana Smoothie

This smoothie is not only delicious, but also dense and will keep you satisfied all morning!

  • 2 Ripe Bananas (preferably broken into pieces and frozen)
  • 1 tbsp of Peanut Butter
  • 1 tbsp of Cocoa Powder
  • Ice (if not using frozen bananas)

Blend all ingredients in a blender until smooth. Taste and add more cocoa powder or peanut butter if preferred. Pour into a glass to enjoy at home or travel cup if drinking on the go!

 

Blueberry Almond Butter Oatmeal

This is my go-to when I want something warm, quick and don’t want to dirty a ton of dishes!

  • 1 cup of dry rolled oats
  • 1 tsp of cinnamon
  • Any plant-based milk or water
  • 1 tbsp of almond butter
  • ¼ cup of frozen blueberries
  • Coconut shreds (optional)

Mix oats and cinnamon in a microwave-safe bowl. Pour milk of choice or water over oats until they are completely covered and mix. Microwave on high for three minutes or until completely cooked. Remove from microwave and mix in almond butter. Top with frozen blueberries and coconut (if using), and dig in!

 

Avocado Toast

Got a ripe avocado and some toast? Well, then you’ve got a breakfast! If you have extra time, experiment with more toppings such as tomatoes, onions, cilantro and jalapeño.

  • 2 pieces of bread
  • 1 ripe avocado
  • Salt and pepper
  • Handful of fresh spinach

Toast bread if desired. Cut avocado in half. Scoop each half of avocado on a piece of bread. Use a fork to mash to avocado onto the bread. Add salt and pepper to taste, and top with spinach. Try the toppings mentioned above to make this dish even heartier!

 

Hummus Sandwich

This is a great option if you want to throw a breakfast together to eat at the office.

  • 2 pieces of bread
  • hummus
  • 4 cucumber slices
  • 2 tomato slices
  • Arugula/other greens (optional)
  • Smoked paprika (optional)

Toast bread if desired. Spread hummus generously on each piece of bread. Add cucumber slices and tomato slices on one piece of bread. Add arugula/other greens and smoked paprika if desired. Close the sandwich and enjoy!

 

Tofu Scramble

If you want more of a traditional breakfast, this is a great option! Add things like black beans, mushrooms, bell peppers and kale if you have more time.

  • 1/2 package of extra firm tofu
  • 1/4 onion chopped
  • 1 small tomato chopped
  • 2 tbsp of nutritional yeast
  • ½ tsp of turmeric (for yellow color)
  • Salt and pepper

Drain excess liquid off tofu. Crumple into small pieces with hands into a non-stick pan. Add onions and tomatoes and cook on medium heat. Add suggested ingredients above if using. Mix in the rest of the seasonings. Cook until onions are translucent and most of the liquid has evaporated. Serve on a plate with some toast if desired.

 

Banana PB&J on Rice Cakes

This is probably the easiest recipe to put together. Feel free to use regular bread instead of rice cakes if you prefer!

  • 2 rice cakes
  • Peanut butter
  • Jelly
  • ½ a ripe banana sliced
  • Ground cinnamon

Spread peanut butter and jelly on rice cakes. Top each rice cake with banana slices and cinnamon to taste.
